This soft, organic cheese with a washed rind is made with thermized milk and ripened for 60 days. Under its orange, slightly humid and sticky rind is a supple, smooth and uniform cheese punctuated by small openings and featuring milky, hay and herb aromas. Its texture is rich and its taste has hints of cream and salted butter that give way to a unique black olive flavour.
Ste-Anne is an abbreviation of Sainte-Anne-de-la-Pérade, the town where the cheese maker is located.
