This firm, rindless, unripened cheese is made from pasteurized milk. It is flavoured with exotic spices such as mahalab and nigella (kalonji seeds) before being salted in brine. The cheese is prepared and braided in the Lebanese tradition. It is smooth and shiny with a salty, delicate lactic flavour with hints of nigella. This “twisted” cheese is a delight for the eyes as well as the taste buds!
