This semi-soft cheese, both surface-ripened and interior-ripened, has a pale yellow or copper washed rind that is dry, smooth or sticky depending on age. Made from pasteurized milk, its cream-coloured interior is smooth and supple. It has a delicate, creamy, slightly tart flavour suggestive of over-ripe apples. Its aroma is complex, with strong notes of nut, straw and fir.
Vacherin St-Alexis is available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.
