The surface ripening gives the rind a slightly orange tint. It has a firm texture when young that becomes runny as the cheese ages. Its distinctive flavour will please even the most discerning cheese lovers. Bring out the delicate aromas of cow, goat and sheep by pairing this cheese with a slightly fruity white or red wine.
In addition to standing for the tricolour of the Acadian flag, the three types of milk that make up this cheese represent the close partnership forged between the Maine, Madawaska and Témiscouata regions in organizing the 2014 World Acadian Congress. So there you have it: three regions, three types of milk, and Alexina, which is a typically Acadian name—not to mention the name of the owners’ daughter!
