Beet salad with blood orange, grilled radicchio, dried duck magret and Le Maria Chapdelaine

Ingredients

  • 300 g (10 oz) Mini beets (a mix of red and yellow beets), washed
  • Water
  • 30 ml (2 tbsp.) Extra virgin olive oil
  • Salt and pepper, to taste
  • 60 g (2 oz) Shelled pistachios
  • 15 ml (1 tbsp.) Extra virgin olive oil
  • 2 Radicchios, sliced in half from top to bottom
  • Salt and pepper, to taste
  • 30 ml (2 tbsp.) Balsamic vinegar
  • 1 Blood orange, supremed
  • 100 g (3½ oz) Fresh cream
  • 100 g (3½ oz)Dried duck magret, minced
  • 300 g (10½ oz) Le Maria Chapdelaine cheese, finely sliced
  • 45 ml (3 tbsp.) Balsamic vinegar

Preparation

  • Place the beets in a baking dish and cover the bottom of the dish with water. Add olive oil, salt and pepper.
  • Cover the dish with aluminum foil and bake at 375°F (190°C) for 30 to 40 minutes until the beets are tender.
  • After cooking, cool before removing the skin of the beets by rubbing them with a paper towel.
  • Place the pistachios in a baking dish and toast them for 10 to 15 minutes until golden. Chop coarsely.
  • Pour olive oil into a skillet over high heat, add the radicchio cut side down and cook for 1 to 2 minutes until golden.
  • Remove from the skillet and season with salt, pepper and balsamic vinegar. Cool in balsamic vinegar.
  • Remove the radicchio hearts with a knife and separate into individual leaves.
  • Zest the blood orange and add to the fresh cream.
  • Slice off the top and bottom of the orange, and remove the peel and then the white flesh.
  • Using a sharp knife, slice the supremes and place them on a paper towel.

Presentation

  • Put a dollop of fresh cream on a plate.
  • Mix the beets, duck magret, orange, radicchio, Le Maria Chapdelaine, olive oil, balsamic vinegar, salt and pepper.
  • Place the salad on the fresh cream and sprinkle with toasted pistachios.
