Blood Sausage Cromesquis with Le Mont-Jacob, Pear Honey Butter

Ingredients

Blood sausage cromesquis with Le Mont-Jacob

  • 1 shallot, finely chopped
  • 15 ml (1 tbsp.) clarified butter
  • 1 pear, peeled, seeded and diced
  • 240 g (8 oz.) blood sausage
  • 100 ml (3½ oz.) cream
  • 150 g (5 oz.) Le Mont-Jacob cheese, grated
  • 1 egg
  • 150 ml (⅔ cup) milk
  • 60 g (2 oz.) flour
  • 60 g (2 oz.) breadcrumbs
  • 60 g (2 oz.) panko (Japanese breadcrumbs)
  • Sufficient quantity of salt and pepper
  • Sufficient quantity of corn salad leaves (or lettuce)

Pear honey butter

  • 2 pears, peeled, seeded and diced
  • 60 ml (1¼ cups) water
  • 60 g (2 oz.) cold unsalted butter, cubed
  • 15 ml (1 tbsp.) honey

Blood sausage cromesquis with Le Mont-Jacob

  • Sweat the shallots in the butter. Add the pear cubes and cook them until tender. Set aside.
  • Peel back the skin of the blood sausage and put the stuffing in a mixing bowl.
  • Add the cream, the pear mixture and the cheese. Season to taste.
  • Pour onto parchment paper in a rectangular mould and press into shape. Cover with plastic film and freeze for a few hours. Take out of the mould and cut into 2 cm cubes (¾ inches).
  • Pour the flour in a first bowl.
  • In a second bowl, whip the egg and the milk.
  • In a third bowl, combine the two kinds of breadcrumbs.
  • Bread the blood sausage cubes by rolling them in the flour before passing them in the egg mixture and the breadcrumbs mix.
  • Preheat the oven and the deep fryer to 350°F (180°C).
  • Cook the cubes in the deep fryer for 2 minutes or until they are a suitable colour.
  • Set the fried cubes on a plate covered with paper towel and finish them by baking in the oven for about 5 minutes. Set aside and keep warm.

Pear honey butter

  • Place the pears, water and honey in a saucepan and cook over medium-high heat until the pears are cooked through to the middle.
  • Drain and purée. Add the cubes of butter one at a time. When the pear butter is homogeneous, put it in a container and refrigerate.
  • Serve the blood sausage cromesquis hot with the pear honey butter. Garnish with a small bunch of corn salad leaves.
