- 1 mango, sliced
- 1 Santa Claus melon*, sliced and diced
- Zest and juice of 1 lemon
- 60 ml (1/4 cup) olive oil
- 60 ml (1/4 cup) fresh mint, chopped
- 250 ml (1 cup) Le St-Félicien Lac-Saint-Jean, cut in small sticks
- 1 L (4 cups) field salad**
- 8 prosciutto slices
- Salt and pepper
- Prepare a medium-intensity charcoal fire or set gas BBQ at medium.
- In a bowl, whip the lemon zest and juice with the oil and mint.
- Mix together with the mango and melon.
- Grill the fruit on the BBQ to char them well. Set aside.
- Before serving, put the fruit on four plates, the field salad, the prosciutto slices and top with Le St-Félicien Lac-Saint-Jean.
- Pour a dash of olive oil. Add salt and pepper.
- *You can replace the Santa Claus melon with a cantaloupe.
