Mighty L'Hercule de Charlevoix


  • 125 ml (1/2 cup) L’Hercule de Charlevoix cheese, grated
  • 115 g (1/4 lb) ground beef
  • 1 small shallot, chopped
  • 2 basil leaves, finely chopped
  • 1 egg yolk, beaten
  • Salt and freshly ground pepper
  • 60 ml (1/4 cup) marinara sauce, home-made
  • Bread chosen: Ciabatta

Marinara sauce

  • 30 ml (2 tbsp.) butter
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 1 can of 796 ml (28 oz) stewed tomatoes
  • Salt and freshly ground pepper

  • In a bowl, mix the ground beef, shallot, basil, egg yolk, and half of the cheese together. Add salt and pepper.
  • Shape into meatballs and cook in the frying pan.
  • Mix the meatballs with the marinara sauce. Set aside.
  • Slice the bread in half.
  • Fill with meatballs and cover with the remaining cheese.
  • Place the sandwich on a baking sheet and bake until cheese is melted.

Marinara sauce

  • In a frying pan, melt the butter and brown the onion and garlic. Add tomatoes. Then, add salt and pepper. Simmer over medium heat, stirring occasionally. Coarsely purée in a blender.
