Ingredients
- 60 ml (1/4 cup) Gouda Cheese St-Laurent, grated
- 2 eggs
- 30 ml (2 tbsp.) milk
- Salt and freshly ground pepper
- 15 ml (1 tbsp.) butter
- 60 ml (1/4 cup) mild Italian sausage, diced
- 1/2 onion, thinly sliced
- 1 small Italian tomato, diced
- 15 ml (1 tbsp.) salsa, home-made
- 1/2 avocado, cut into thin slices
- Bread chosen: Croissant
Salsa
- 1 small cucumber, diced
- 1 tomato, diced
- 1 shallot, finely chopped
- Juice and zest of 1 lime
- 15 ml (1 tbsp.) fresh cilantro, chopped
- 15 ml (1 tbsp.) fresh parsley, chopped
- Salt and freshly ground pepper
Preparation
- In a bowl, beat the eggs and milk. Add salt and pepper. Set aside.
- Melt the butter in a frying pan, and cook the sausage until golden.
- Add the onion and tomato.
- Cook for a few minutes longer.
- Pour the egg mix, and stir while continuing to cook until the eggs are done.
- Cover with cheese and let melt. Set aside.
- Heat the croissants and slice open.
- Top with the scrambled eggs, salsa and avocado slices.
- Cover with the remaining croissant slices.
Salsa
- In a bowl, mix all the ingredients together. Set aside in the refrigerator.
