- 60 ml (1/4 cup) Comtomme cheese, grated
- 60 ml (1/4 cup) cooked lobster, cut in cubes
- 1 mango, peeled and cut in cubes
- 15 ml (1 tbsp.) red onion, finely chopped
- 15 ml (1 tbsp.) fresh basil, finely chopped
- 15 ml (1 tbsp.) mayonnaise
- Zest and juice of 1/2 lime
- Salt and freshly ground pepper
- Bread chosen: Brioche roll
- In a bowl, mix the lobster, mango, red onion, basil, mayonnaise, lime zest and juice and cheese together. Add salt and pepper.
- Slice the roll open.
- Spread the lobster salad and close the roll.
