The Copious With Saint-Fidèle Old Swiss


  • 60 ml (1/4 cup) Le Saint-Fidèle Old Swiss cheese, grated
  • 60 ml (1/4 cup) crab meat, shredded
  • 60 ml (1/4 cup) apples, diced
  • 60 ml (1/4 cup) celery root, grated
  • 15 ml (1 tbsp.) saffron mayonnaise, home-made
  • Salt and freshly ground pepper
  • Bread chosen: Brioche roll

Saffron mayonnaise

  • 30 ml (2 tbsp.) mayonnaise, store-bought
  • 5 ml (1 tsp.) lemon zest
  • 1 small garlic clove, chopped
  • 1 pinch of saffron
  • Salt and freshly ground pepper

  • In a bowl, mix the crab, apples, celery root and cheese together.
  • Mix in the saffron mayonnaise. Add salt and pepper.
  • Slice the brioche roll open.
  • Top one half with the crab mix.
  • Cover with the other half of the brioche roll.

Saffron mayonnaise

  • In a bowl, mix all the ingredients together. Set aside in the refrigerator.
