Waldorf salad with endives and Le Rassembleu

4 to 6 portions


  • 500 ml (2 cups) celery, diced
  • 500 ml (2 cups) apples, diced
  • 2 endives, chopped
  • 80 ml (1/3 cup) 15% thick country-style cream
  • 45 ml (3 tbsp.) mayonnaise
  • Salt and freshly ground pepper
  • 125 ml (½ cup) walnuts, coarsely chopped
  • 150 g (5 oz) Le Rassembleu cheese, coarselycrumbled

  • In a bowl, mix the celery, apples and endives.
  • In another bowl, mix the cream and mayonnaise to make dressing. Add salt and pepper.
  • Mix the dressing with the first three ingredients.
  • Divide salad into plates. Add the walnuts and Le Rassembleuu cheese and serve.
