Place slices of grilled Portuguese chorizo, red onion, tomato sauce flavoured with cilantro and white wine, and grated Blackburn cheese in a ramekin. Top with an egg, salt and pepper. Bake for 10 to 15 minutes (the egg white should be cooked, but the yolk should still be runny). Garnish with fresh cilantro and serve with bread. A treat morning, noon or night!
