Mac & Cheese Croquettes
So you made a bit too much of your famous macaroni and Le St-Antoine cheese? That’s perfect—you can make delicious croquettes out of it! Simply place the leftover macaroni in a square dish and refrigerate. When the cheese is hardened, cut out little 2 cm x 2 cm (¾ in. x ¾ in.) cubes. Dip the cubes first in flour, then in a beaten egg, and finally in bread crumbs. Heat some canola oil in a pan and brown the cubes. You can serve these croquettes as appetizers or at a cocktail reception!
