Marinated salmon and spicy Damablanc with cilantro
Want to make little gravlax-style salmon bites? You just need to whip up some spicy marinade. In a bowl, combine 1 tsp. (5 ml) of each of these spices: fennel seeds, cumin seeds, coriander seeds and Sichuan pepper. Add a crushed star anise, 2 tbsp. (30 ml) maple syrup, 1 tbsp. (15 ml) salt, and some pepper. Slather this marinade over half a skinless salmon fillet, then refrigerate in an airtight container for three hours. Then, rinse the salmon and cut it into cubes. The perfect thing to go with this marinated delight is Damablanc cheese seasoned with hot sauce, lemon zest and fresh cilantro.
