Spicy Sauce Con Queso
Make a béchamel sauce by frying in butter chopped onions, diced jalapenos, two chopped cloves of garlic and a dash of chili powder. Add a grated yellow cheese, such as Coolby La Trappe à Fromage or Saint-Augustin, mixing until a sauce forms. Adjust the caliente level or spiciness to your taste. The sauce is perfect for dipping corn tortilla chips in or topping nachos right out of the oven.
